Want something cold and sweet to eat on hot, humid days? These frozen banana bites - complete with salted peanut butter & pretzels - are a little fancier and easier to eat than whole frozen bananas, and take very little active prep time. They’re as easy to prepare as a sandwich, just with more freezing. The mix of sweet, salty, and creamy (plus chocolate coating!) is divine - a perfect snack for a summer arrested development marathon ;P

NATURAL Red Velvet Cupcakes ‘n Pancakes with Healthy Cream Cheese Frosting!
INGREDIENTS (6 cupcakes and 10 mini pancakes)
- 1 cup oats
- 1 ripe banana
- 1 cup almond milk
- 1 steamed beet
- 1 TBSP pure vanilla extract
- 1 TBSP ground flax seed
- 2 TBSP baking powder
- pinch of salt
- a squeeze of lemon
FROSTING (for cupcakes)
- 4 oz of 1/3 less fat Cream Cheese
- 1 TBSP of nonfat plain greek yogurt
- 1 tsp of honey
- drops of natural beet juice to desired color of pink
- dash of psyllium husk to thicken (optional)
CREAM CHEESE DRIZZLE (for pancakes)
- Same as above but add a dash of almond milk to make it more liquidy! Or if you want the consistency to be more ooey gooey add another tsp of honey!
DIRECTIONS FOR CUPCAKES:
- Grab a fresh beet. Chop off the head and tail. Wash the skin thoroughly! You need to scrub it to get the dirt off.
- Then place it in a small bowl filled with a couple TBSP of water. Cover with saran wrap. Then microwave for about 5 min or until soft enough to puree.
- Now! Place the beet in a blender, squeeze some lemon (to preserve radiant red color) and turn it into a soft puree. If you are having difficulty mixing, feel free to add a tiny bit of water.
- Mix the beet puree with all of your other ingredients in the blender!
- Spray your muffin tin with some cooking oil, then pour it in!
- Bake at 350F for about 15 min or until the center is no longer sticky when you dip a toothpick down it.
- Let them cool! I put them in the freezer for about 15 min.
- Then spoon your frostings into ziplock baggies, cup a small hole at the end of a corner, and go decorating crazy!
- You’re done. Now eat. WELL DESERVED.
DIRECTIONS FOR PANCAKES:
- Use the same batter. Just spray your griddle with cooking oil then pour it on, flip, and bam you’re done!
- Drizzle with the cream cheese drizzle recipe.

Apple Cinnamon Protein Pancakes
You’ll Need:
- 1/3 cup oats
- 1/3 cup egg whites
- ½ an apple - grated or chopped
- 1 scoop vanilla protein powder
- ¼ tsp cinnamon
- ¼ tsp vanilla extract
Directions:
- In a bowl, mix together oats, egg whites, protein powder, cinnamon, and vanilla extract.
- Fold in the chopped or grated apple pieces.
- Pour half of the mixture on a pan or griddle sprayed with non-stick cooking spray over medium heat.
- Flip until they become golden brown on both sides.
- Top with extra apple slices and syrup or natural nut butter and enjoy :)

Baked Zucchini Fries
Ingredients:
- 3 medium zucchini, sliced into sticks (94)
- 1 large egg white (16)
- 1/3 cup seasoned whole wheat bread crumbs (110)
- 2 tbs. grated Pecorino Romano cheese (50)
- cooking spray (5)
- ¼ tsp. garlic powder (2)
- salt (0)
- fresh pepper (1)
Method: Preheat the oven to 425 F. In a small bowl, beat the egg whites and season with salt and pepper. In a ziplock bag, place the breadcrumbs, garlic powder and cheese; shake well. Spray a cookie sheet with cooking spray and set aside. Dip the zucchini sticks into the egg and then place into the bread crumb and cheese mixture, a few at a time and shake to coat. Place the breaded zucchini in a single layer and spray more cooking spray on top. Bake for 20 - 25 minutes, or until golden brown. Serve with some sauce of choice (optional) for dipping.

- Blend desire fruit in blender or food processor
- Pour into bowl
- Add water (I’m guessing about a 1-to-1 ratio, change it based on desire flavour)
- Add chopped in fruit
- Stir
- Pour into ice trays and freeze!

Makes two sandwiches
Ingredients
- 4 slices fresh-baked bread
- 2 tablespoons cream cheese
- 1 cup sharp cheddar cheese, grated
- 4 slices bacon
- 6-8 large broccoli florets, finely chopped
- 3 slices onion
- 1 clove garlic, minced
- Splash of chicken stock
- 4 tablespoons butter
Method:
In a large frying pan over low heat, slowly cook bacon until brown. Drain on paper towels and set aside. Drain all but a few teaspoons of fat from the pan.
In the same pan, increase heat to high and add broccoli, onion, garlic, and a splash of chicken stock. Cook until broccoli turns dark green but is still crisp, 1-2 minutes.
To assemble each sandwich: Spread both pieces of bread with a very thin layer of cream cheese, and top each slice with some of the shredded cheddar. Add bacon and broccoli mixture to one slice, and close sandwich. Spread a tablespoon of butter on each side of the outside of the sandwich. Grill in a clean frying pan or on griddle over medium heat, flipping occasionally, until cheese is melted and bread is golden brown, 4-6 minutes.
